It is derived from the cured pods of the Vanilla planifolia orchid, a plant native to Mexico and now cultivated in regions such as Madagascar, Réunion, and Tahiti. The transformation from fresh green pod to aromatic ingredient requires a meticulous curing process, during which enzymatic reactions develop the characteristic vanillin-rich profile.

In its natural form, vanilla reveals a complex olfactory structure. Beyond its recognizable sweet facet, it carries creamy, balsamic, slightly woody, and softly spicy nuances. Depending on origin and extraction method, the scent may also present subtle leathery or smoky undertones, adding dimension to its composition. Vanilla absolute, obtained through solvent extraction, offers a dense and textured expression, while CO₂ extracts can preserve a more nuanced, true-to-pod character.
